The Fundación del Jamón Serrano Español (Spanish Serrano Ham Foundation) was created in 2000 at the initiative of the CONFECARNE Ham Board, an association that accounts for over 80% of cured ham production in Spain. This non-profit organization is responsible for leading and managing the project for implementing the Jamón Serrano TSG seal, thus becoming the driving force behind the initiative.
As the representative body for the Jamón Serrano TSG seal, the Fundación works to protect, improve and promote quality Jamón Serrano (Serrano Ham), setting it apart from other cured hams that are not produced in accordance with the Specifications Sheet and which therefore do not guarantee the minimum quality required to be granted TSG status.
The Fundación has therefore created a counter label to designate genuine Jamón Serrano, at the same time guaranteeing maximum product quality, promoting knowledge about Traditional Speciality Guaranteed status, and adding prestige to all hams bearing this seal.
Only hams that comply with the minimum requirements may carry the Jamón Serrano product guarantee, and only the finest of these receive the counter label of the Fundación.
