The counter label on Jamón Serrano produced by the Fundación not only certifies that the product meets the quality standards established in the specifications sheets, but also guarantees a minimum curing period for each piece, verified by independent control bodies.

Each Jamón Serrano bearing the Fundación seal provides additional information including a curing guarantee, helping to further refine the Jamón Serrano market. These counter labels let the consumer know that our Jamón Serrano is of the finest quality.

The Fundación del Jamón Serrano has established the following CATEGORIES:

  • RESERVA: Jamón Serrano that has been cured for between 12 and 15 months.
  • GRAN RESERVA: Jamón Serrano cured for over 15 months.

  • They are identified with these counter labels: 


    The Fundación also uses counter labels to identify smaller formats (slices, chunks, halves, thirds, quarters), which have been cured for a minimum of 10 months.
